Garrett's Lemon Blueberry Cake
Ingredients
For the cake:
7/8 cup (14 tbsp) salted butter, softened to room temperature
1 ¼ cup granulated sugar
½ cup packed light brown sugar
4 large eggs
1 tbsp pure vanilla extract
3 cups sifted all-purpose flour
1 tbsp baking powder
½ tsp salt
1 cup plain Greek yogurt, refrigerated
¾ tbsp fresh lemon zest
½ cup freshly juiced lemons (you’ll need about 3 medium)
1 ½ cup frozen blueberries
1 tbsp all-purpose flour
For the icing:
8 ounces full-fat Philadelphia brick cream cheese, softened to room temperature
½ cup unsalted butter, softened to room temperature
3 ½ cups confectioners’ sugar
Heavy whipping cream
1 tsp pure vanilla extract
Pinch salt
